We want to celebrate summer by taking advantage of every single moment with our kids. After a hectic school year, we want to be able to relax and have some quality time together. Our summers include trips to the pool and splash park along with trips to the bowling alley and zoo. Somedays our lunches can seem just as rushed as our lunches at school…and we all know how quick those fly by! One of our goals this summer has been to create some summery lunches that are quick and delicious. We want lunches that make us feel like we are relaxing at a nice cafe even when we’re not. Add a nice glass of iced tea and we will be set! #CollectiveBias helped us move towards our goal with some great ideas from Lipton on #TEArifficPairs!
Sunday we left all six kiddos with the husbands and escaped to Walmart to purchase ingredients for our first attempt at a summery lunch. Our to-do list between activities for our children and tasks for the web site is HUGE for this week so an easy lunch sounded worth the trip to the store. While there we not only picked up the ingredients for our recipe but some Lipton Iced Tea. We even got to sample Lipton Tea & Honey – a Liquid Iced Tea Mix that will be great to take to the pool. It will be easy to throw in the bag so that we can have something other than water while we are relaxing! Just add a little to a bottled water and go. We tried the Summer Peach flavor although there are other flavors to choose from. You can find out a little more about the Lipton products Walmart offers here: Walmart. We decided on a twist on your everyday chicken salad. Instead of using canned chicken (which would be quick but not quite as tasty as we would like) or cooking our own chicken (which would be delicious but time consuming) we decided to purchase a rotisserie chicken to chop. This was our biggest shortcut and what a time saver it was! This chicken salad is unique – the recipe includes poppy seeds, yogurt and honey. We paired it with a glass of Lipton Fresh Brewed Iced Tea which we infused with strawberries. (We know…that sounds super fancy! Really – we just followed the directions to brew a quart of tea and sliced a pound of strawberries. We added the strawberries to the tea and let it sit in the fridge for a few hours. It added a little sweetness without adding sugar.) Tomorrow we’re headed to the pool with our kids and we’re going to bring along the Tea & Honey Iced Tea Mix, we think it will pair perfectly with the chicken salad.
Our recipe calls for two cups of chopped chicken. However, if you like your chicken salad to be a little less creamy, you can use up to three cups. We chose to use sunflower seeds as Jill is allergic to tree nuts. The seeds added a little crunch to the salad!
- 2 cups chopped rotisserie chicken
- 1/4 cup light mayo
- 1 small container plain Greek yogurt
- 1 tablespoon honey
- 1 tablespoon poppy seeds
- 1/4 cup sunflower seeds
- 1 cup green grapes, halved
- Cut off and chop 2 cups of chicken.
- Stir together all ingredients.
- Place one to two large scoops on a croissant or other bread.
- Add romaine lettuce.
This chicken salad was the perfect, easy recipe to make on a Sunday evening before our busy week began. We talked through our weekly schedule while tossing the ingredients together. Now we have a quick lunch that tastes as good as a lunch at a fancy cafe and goes so perfectly with a fresh brewed glass of Lipton Iced Tea! Next, we will be looking into trying out one of Lipton’s tea recipes at Lipton. We think the Citrus Tea Punch will be our favorite!
